OLED encoder input crashes ESP12F #662

The web interface works fine.
The display works fine, if I don't use it.
Before I made the whole thing I tested it with a NodeMCU (Esp2866 Dev).

When I turn the encoder it feels (and is) laggy, I have to go very slow. Clicking on a menu seems buggy and it often crashes the ESP12F (I didn't use a node MCU because I wanted to be small. The ESP12F is exactly the same as a nodeMCU except it's without the USB, voltageregulator, etc). When I turn the encouder to fast it also crashes or it will jump in and out menus and then it crashes the ESP. The same thing happened with the NodeMCU.
I've already tried a new rotary encouder, but that also didn't fix the problem.
If I don't use the encouder and just only the web interface it never crashes and can run for hours without any problem.
Any idea what can be wrong?

PS: I've tried different versions, but that didn't help. Maybe the 2 encoders I tried are faulty and I had bad luck. I have more of them, but seemed pointless to try yet another one (It's quite the work because I've soldered it to 2 stacked "Empty PCBs"pieces with connector and all soldered to the PCB's so I can disconnect that part of the GBSC)?
