Doc: quickstart.md

Hi all. I know this might be obvious to some but could we add: 

`export KUBECONFIG=~/.sim/admin.kubeconfig` in the steps before running the kubectl commands?

BTW, I found the answer in Slack but it seems like this is the better location.
