Automate Turtles version update in sample commands

# Description

There are multiple references to a specific version of Turtles (e.g. https://turtles.docs.rancher.com/next/getting-started/install-rancher-turtles/using_helm/) that must be updated to align with the latest version available. This could be automated to avoid human error.
