Remove the ClusterClass template from the e2e suite folder

We need to remove https://github.com/rancher/turtles/blob/main/test/e2e/data/cluster-templates/docker-rke2.yaml, this will require switching ETCD snapshot/restore tests to the new clusterclass structure because they currently consume the old one.
