explore using more recent SHAPEIT version

we are using/recommending v2 from conda recipe: https://anaconda.org/dranew/shapeit

whereas the current version is v5: https://odelaneau.github.io/shapeit5/

not actually sure what is different for our use case since they have somewhat unintuitive versioning, but could be worth looking into
