Clean up CMakeList #2
Description
When I started this project, I knew extremely little about CMake. When I released this project, I still know extremely little about CMake.
This is just a ticket for me to come back later and clean it up... I nuked the original just for my own education but it would be great to just edit the original to accommodate the Switch's parameters to compile the game in parallel for Windows/MacOS/iOS or whichever to ensure parity with the upstream version of the game.
