docs: update README screenshots for v2.7 (paths + upscaling filters shot)

Repoints the screenshot links broken by the v2/v2.7 folder reorg, swaps
in the new v2.7 captures (hero, stream UI, OCR, shortcuts), and adds a
GPU upscaling filters showcase image (the v2.6 feature never had one).
