[Code Bug]: Weekly jobs are not running

What happened?

Fix the broken weekly jobs. They have not been running for several months now, since the end of May 2025. It seems like the workflow files point to a container tagged opencsp-latest-ubi8. However, when I look at the container registry, I see the tag as opencsp-latest-ubi8-latest. I already tried changing this on my own fork in a feature branch and it didn't work. The weekly gets kicked off every week from the main branch. So I may need to modify it there.

Version

A couple of different versions, one on the main branch where the weekly runs from and then on a feature branch on my fork.
