tensor/issymmetric can be reduced to only fast method with just a single option.

I think it's fine to just use the one fast method for tensor issymmetric. It's odd to have this "version" option that is exposed.

Let's update the documentation to mention that the version is for backwards compatibility and shouldn't need to be changed.
