Adapt CI/CD related files to be more consistent with lab-cosmo

This as discussion point next time we discuss the future of scikit-matter. This would simplify software development between cosmo packages.

I think this is now mostly done. The only difference is that for the other projects we deploy the docs with gh pages while in skmatter we use rtd.
