table formatting: center columns?

For the table in Chapter 10, the fact that the column headers are centered but the column contents are not is a bit ugly. @karthik - do you know how to fix this?  If so, the new tables in chapter 4-7 could use the same fix as well.  If you know how to do this, I can apply it, or you could if its easy enough
