API upgrade to v2 for check_access

As GET /settings/organization is coming to EOL, it should be replaced with v2 equivalent GET /setup/organization in the check_access function. Failing to do so would result in the failure of data extraction after the APIs are revamped as of 7th Aug, 2025 in sandbox and by 22nd Sept, 2025 in production. Revamp Doc

Because /setup/organization is open only to admin we can no longer use it check_access so need to replace it with something else entirely.
