Expand `combine_column_version` to be warehouse agnostic

Describe the feature

Could we create a combine_column_version macro that combines major versions of columns, with a specified field, and returns the value of that field across the versions of the column? We already have this for BigQuery but could we provide this functionality for Snowflake/Databricks as well?
