Adopt scikit-image as a required dep?

Is there a good reason not to do this? The package is becoming more widely used, it's available through the major package managers (not just pip and conda), and the core functionality is mature. It would be nice to rely on their color conversion utilities instead of rolling our own.

That gives up the chance of ending up with PIMS as a dependency for skimage while still remaining an independent project.

It also brings in scipy as a dependency which is a very heavy package, I would rather keep pims as light of an installation as possible.

It might be worth providing a convenience method which will turn functions with the signature of skimage's color conversion code into a function that can be passed in as the process function. The docs should show how to use the common colors conversions via skimage.

I was never a fan of the as_gray kwarg to begin with due to mission creep and worms 😉.
