[FEATURE] Allow users to specify the log directory

• What are you trying to do?
  Users could benefit from being able to specify the log directory, in case their CI/CD platforms lock down too much (maybe they can use /tmp for example, etc..

This was brought up by @KevinFauth

• What feature or behavior is this required for?
  Just a nice feature for people who want to put the logs somewhere specific

• How could we solve this issue? (Not knowing is okay!)
  Ionno 🤷‍♂ ? Probs look at Config and do it in there :)
