Document supported database versions & bump database versions

I am trying to deploy a new instance of Specify and it would be really nice to have documentation on which database versions are supported. Both for MariaDB/MySQL and Redis.

One thing I noticed in the docker compose files is that with some of them, redis:latest is used, while with others, redis:6.0 is pinned.

This is problematic as redis:6.0 has gone EOL years ago, and at minimum we should be running redis:6.2. Ideally redis:7-alpine should be pinned instead, if it works.

Okay it seems to work with Valkey 8 btw
