ci: drop release-please, releases are manual

Publishing a GitHub release (any tag vX.Y.Z, auto-generated notes are
fine) is the whole flow — it triggers the image build and VPS deploy
plus the edge worker deploy. The version reported by /health and Sentry
derives from the release tag, so nothing depended on the pyproject bump
release-please automated.
