[Docs]: Tiered storage is still reported as "early access"

Suggestion / Problem

The current Strimzi 0.45.0 release has support for Kafka 3.9 where tiered storage was declared to be production ready while in the current doc we are saying it's still "early access".

I think we should fix both documentations.

I can update the docs to reflect the production-ready status of tiered storage in Kafka 3.9, if we feel we're at the point
