[Infrastructure] - Replace TextAffinity with a DocumentAffinity

We've used TextAffinity to represent affinity within a document. This is probably confusing for people who aren't familiar with Flutter's existing concept of TextAffinity. Replaced TextAffinity with DocumentAffinity when referring to the order of content within a document.
