Build fails with the current version of yojson: `Error: Unbound value Yojson.Safe.start_any_variant`

@tmcgilchrist start_any_variant was removed from yojson in this commit: ocaml-community/yojson@1b7083f
The latest release (3.0.0) therefore does not have it.

It builds with yojson 2.2.2, but reverting yojson update gonna break something esle…
