i had solve the issues adding to my .bashrc file this:
export OCR_AGENT = "unstructured.partition.utils.ocr_models.tesseract_ocr.OCRAgentTesseract"

The following steps worked for me

1. Add the following
   OCR_AGENT=unstructured.partition.utils.ocr_models.tesseract_ocr.OCRAgentTesseract in .env file
   or
   os.environ["OCR_AGENT"] = "unstructured.partition.utils.ocr_models.tesseract_ocr.OCRAgentTesseract" in main script.

2. Run the command pip install unstructured_pytesseract in the command terminal [if not installed already]
