Improve theme colors and contrast ratio

- Apply the same OKLCH-based chroma to the red/blue theme to reduce the amount of tint on the themes.
- To have better contrast ratio and text readability, use the`on_surface` instead of the `on_surface_variant` for texts if it is possible.
