Add support for other species

Looking through the [README for SigProfilerMetrixGenerator](https://github.com/SigProfilerSuite/SigProfilerMatrixGenerator/blob/af56c83fb1ea6dbc2d84b37e0d6b2ad14a89d7b8/README.md?plain=1#L216) it seems that SigProfiler should be able to support profiling other species. Support for this would enable signature analysis in model systems (for those model systems supported).
