Add AI chat and MCP

Many users have access to all their analytics data, but still struggle with knowing what to look for or how to configure the right filters.

A natural next step would be a "chat with your data" feature that allows users to ask questions in plain language and receive meaningful, context-aware insights across their entire dataset.

The goal shouldn’t just be translating queries into answers, but helping users discover patterns, trends, and anomalies without requiring deep analytics knowledge.

Additionally, exposing this capability via MCP or API would make it possible to query Umami data outside the UI — for example through local AI assistants or automated workflows.
