Trying to add another (second) ethernet connection in the guest

I've been poking around, trying to figure out why the network only grabs one option, and does change if I remove an option, but never provides all the options. Trying to keep internet access on main network - default, and add another ethernet network that talks to a specific device only on a completely different IP for specific software application. Am I missing something obvious or is this just not possible in UTM?
