enable custom encoding / formatting for export files

Problem description

Currently the formatting resp. the encoding for the export files is hardcoded.

Enhancement

Solution

Create EncodingConfig (or something similar), which can be passed when exporting sensor data, which stores, which encoding, whitespaces or delimiters should be used for export.
