Fix found issues with CMake when creating .rpm packages (#260)

The CMake build can generate a .rpm package using its include `cpack`
tool, but some required fields were given default values and hence
incorrect. These fields are now specified, and the project name is
corrected so that cpack generates correctly named packages.

A RPM package can be built using:

mkdir build && cd build
cmake -DCMAKE_BUILD_TYPE=Release ..
cpack -G RPM
```
