Clean up Cargo.lock and remove stale possible_values from help tests

Reset Cargo.lock to main and regenerated, so the diff only contains
new dependencies needed for the otel feature instead of version
pinning noise. Remove [possible values: grpc, http-protobuf] from
help text tests since the protocol field now uses FromStr for
custom alias support.
