Any reason for "latest" tag in lmcache/vllm-openai image?

Hello,

I tried to deploy lmcache/vllm-openai image from a specific tag and found out command argument being set incorrectly. Is there any reason to modify command to execute only when "latest" tag for lmcache image is used?
