Update $el type in documentation to align with vuejs/core discussion

The $el property type in the Vue documentation currently specifies Node | undefined.

However, as discussed in the Vue Core issue #7915, the actual type is any due to support for custom renderers. The documentation needs to be updated to reflect this correctly.
