Install pod logging on EKS

Problem

I'm interested in getting better logging both for VIVO and ReCiter. The pods are deleted after they complete so it's hard to troubleshoot potential errors.

Solution

EKS supports pod logging. See the following.

This will allow us to see and troubleshoot errors like this one:
