Align the core and EE helm chart auth sections

So that the login username is the same by default at least.

e.g.

• core: templates the admin user into the rolebindings (so if set user to admin in values.yaml you can login as admin as the rolebindings all use admin)
• EE: helm chart templates are hardcoded to wego-admin so you have to login as wego-admin
