So for example i can say i want to Unload the Batterie but dont want load it at the moment?

Sure, just set the operating mode to "manual" and then tell the battery how much energy to consume (draw from the net) or dispense '(send to consumers). This can be done using the sliders or using the actions provided by the integration. If you want a more dynamic solution you'd need an automation that for example monitors the current consumption from the net, switches the battery to manual mode and tells it to discharge the needed amount of energy plus a little overhead. Be aware, though, that depending on how your Sonnenbatterie is wired into your home, the data provided isn't actually measured but estimated instead. And since consumptions are awlways fluctuating you'll never achieve a perfect match.
But in general, yes, it's doable.
