docs: Transit encoding issues section is outdated

It appears that the issue described at https://wilkerlucio.github.io/pathom/#_fixing_transit_encoding_issues is not present in `com.cognitect/transit-clj     {:mvn/version "1.0.324"}`. I was able to get the default working without having to rely on the workaround posted there.
