Setup a demo for the OpenTelemetry extension #3

Summary
At the moment there is no documentation or demo for the extension, but presumably it should work. It would be nice to create a demo, e.g. using Docker Compose, that includes WireMock, Prometheus and Jaeger. We can demo both OTel traces and metrics using this demo
