Add integration tests for WireMock 3

Proposal

The official WireMock Docker image now offers the experimental WireMock 3.x tag. We should add integration tests for it to the pipeline. New tests must be implemented for the 3.x features

Scope

• Add integration test for wiremock/wiremock:3x
• Update documentation to mention compatibility with the release
• Nice2Have - A dedicated test for a WireMock 3 - only feature
