Incorrect log appender path in the ELK setup documentation

In the documentation for setting up ELK based anaytics, the Creating Log Appenders section uses an incorrect log files path location.

${sys:carbon.home} should be repalced with ${sys:logfiles.home} as correctly stated in the documentation for Configuring Logs
