Update the quick-start and Sandbox to demonstrate MCP Server being Resource server by adopting a separate Auth Server for authorization

Demo scenario needs to update to,

1. Run OpenMCPAuthProxy in gateway mode for token validation
2. Move discovery, authorisation and token requests to Auth Sandbox (Asgardeo)
