Make GH workflows run test with python 2 as well as 3

We need to add a 2nd job running the tests with python 2, testing both versions will help us develop python code compatibles with 2 & 3 and ease the transition towards python3 when we'll need to.
Plus for now the code is tested in python 3 but run in python 2 on the hosts.
