Bug: transport error on dependency k8s cluster

### Describe the bug

We have encountered an issue, after deploying our API server to our k8s cluster, Client.create fails with transport error. 

I think https://github.com/xmtp/proto need to add google-protobuf as dependency.


Also, the tooling in that repo could use some TLC
