Add `MODELS_INFO` to all v1 quirks

Some quirks do not provide MODELS_INFO (and also not MODEL or MANUFACTURER).
These quirks should be updated to provide one of the above if possible.
It might be hard to get all matching model/manufacturer names though.

A test was added in this PR which also exempts some quirks:

• Add test requiring new quirks to provide model info #2720

Additional information

• Add Samjin multi sensor variation without Diagnostic cluster #2719 is somewhat related to this, as the SmartThings quirk currently seems to match with a Samjin device, even though that also provides a quirk.
