For some reason the uv version bump to v1.0.3 was not taken over in the pyproject.toml

…. Dev now uses auto-verify 1.0.0 with sdpcrown support. Also update onnx dependencies. Closes #169

Need to still update uv.lock before merging. This is only possible once auto-verify 1.0.0 is released |
