Starts tracking Spark Savings USDC/USDT/pyUSD/ETH vaults
The addresses can be found in spark-address-registry repo:

• ethereum
• avalanche

The data in the adapter matches data from Spark's app.
The adapter tracks only new Spark Savings Vaults (v2)
