Description

Migrate Python building and dependency management to Poetry. This could:

• Provide more stable environments
• Reduce complexity and number of files currently used in the dynamic builds (setup.py, info.py, requirements.txt, ...)
  • As this is pyproject.toml based linting and formatting config could also be moved to this after (e.g. when Ruff support is added later)
• (Not implemented here yet) Dependency variants could be moved to extra Poetry dependency groups and conditionally installed by the different docker images - this way they are defined statically and tidy at one point and complexity of the docker build scripts is reduced
