Various updates to metadata based on CEOS, JPL and Hackathon feedback:

• Updating RTC_S1 product geometries with correct ones from the CDSE. This is acheived by saving the burst geometries to a json file and reading them in when the STAC file is created.
• Ensuring the product_data_access and static_layers_data_access tags get correctly set in the .h5 and Geotiff files. This required an update to the GeoscienceAustralia/RTC image fork as referenced in the Dockerfile
• Query both CDSE and ASF to get the bursts IDs from the scenes
• Update STAC asset names to include oa per GA convention. e.g. local_incidence_angle -> oa_local_incidence_angle
• Lowercase the backscatter assets : VV -> vv
• Update mask asset: mask -> oa_shadow_layover_mask
• Remove XML tags that aren't required
