Add mimetypes when uploading to S3

Why?

Some files were being uploaded with the incorrect mimetype (a standard for specifying filetypes on the internet, stands for Multi-purpose Internet Mail Extensions). This may lead to potential online file-viewing inconsistencies.

E.g. .json files being uploaded with binary/octetinstead of application/json.

mimetypes is part of the Python standard library so no need to include it in the environment.yaml.

Nice, thanks Aman. Did you try running the test pixi run test-isce3-rtc-full-docker-run to ensure the upload works? It might take 30-1hr depending on your machine
