Code Review

This pull request successfully retires the deprecated Mistral models from the notebook. I've identified a couple of areas where the code can be refactored for better maintainability now that the list of models is smaller. Additionally, I found a small inconsistency in the specified Python version between the notebook's markdown content and the newly added metadata.
