Bump pyjwt to v2.12.1 to address CVEs like CVE-2026-32597.
This is a minor, transitive bump only that is supposedly supported by
jf_ingest.Tested this by doing a download-only github pull against the
jellyfishrepo with a pull date of 2026-01-01. Everything seemed to download fine.
