feat(kong-identity): Document supported dynamic claim types and examples

Fixes #3036

TODO:

• Add a description for what dynamic claims are
• Dynamic claims are evaluated when we mint the token.
• Customers can use dynamic claims for both the auth server and client. (We populate a context variable if it makes sense.)
• We provide two functions for claim mapping uuidValidate and uuidParse
