feat(sdk): add telemetry, pause/resume recurring, appealDispute and token fixes

Implements several SDK improvements and fixes.

Features / fixes

• feat: add SDK telemetry — optional anonymous usage metrics via opt-in flag #156 - optional anonymous SDK telemetry via an opt-in flag on NetworkConfig / VeriTixClient (documented in README).
• bug: recurring.ts is missing pauseRecurring() and resumeRecurring() — contract functions not exposed #421 - expose pauseRecurring() and resumeRecurring() on RecurringModule.
• bug: dispute.ts appealDispute accepts no parameters but contract requires appeal_resolver: Address #422 - appealDispute() now accepts the required appeal_resolver Address parameter the contract requires.
• bug: token.ts totalHolders() typed as Promise<bigint> but contract returns u32 — type mismatch #423 - token.ts totalHolders() typed as Promise since the contract returns a u32.

Tests

• Added/updated tests for token, recurring and dispute covering the fixes. recurring.test.ts passes fully (20/20). The totalHolders and appealDispute tests pass; remaining failures in token/dispute suites are pre-existing and unrelated to these issues.
